For the Chicken
Ingredients:
- 6–8 boneless, skin-on chicken thighs
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sesame oil
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- Firecracker Farm Three Kings Hot Salt – for finishing
- Bachan’s Yuzu Japanese BBQ Sauce – for glaze
- 2 scallions, sliced thin
Instructions:
- Marinate the Chicken: In a bowl, combine soy sauce, mirin, sesame oil, ginger, and garlic. Add chicken thighs and marinate for at least 30 minutes (or up to 4 hours).
- Grill: Preheat your grill (we used @umamigrills) over medium-high heat. Grill thighs skin-side down first until golden and slightly charred, about 4–5 minutes per side.
- Glaze + Bake: Transfer to a baking dish. Brush with Bachan’s Yuzu BBQ sauce, sprinkle with scallions, and finish in a 375°F oven for 10–12 minutes to lock in the flavor.
- Salt to Finish: Just before serving, hit the tray with a few grinds of Firecracker Farm Hot Salt for that final savory spark.
To Serve
Serve hot with steamed rice or grilled veggies. Crisp skin, juicy bite, and that citrus-soy punch will have everyone grabbing seconds.
