Ingredients:
- 2 Slices Of Bacon
- 2 Eggs (Reserve 1 Yolk)
- Parsley Or Cilantro For Garnish
- 2 To 4 Garlic Cloves
- 1/3 Cup Grated Parmesan
- Hot Salt
Directions:
- Crack 2 eggs into a bowl reserving one egg white in a separate dish.
- Mix the eggs with the Parmesan and set aside.
- Start the pasta
- Chop the bacon and brown in a frying pan.
- Cook the pasta per package instructions reserving a bit of pasta water.
- When the pasta is ready toss the noodles in with the bacon and cheese mixture and remove from the heat.
- Slowly stir in the pasta water until you get the sauce to your desired consistency.
- Season with HOT SALT and fresh cracked pepper to taste.
- Garnish with the parsley or cilantro and top it with the reserved egg yolk.
- Finish the entire plate with another sprinkle of HOT SALT.
